Home Cookin'

It's been a while since I last posted here on the blog. We did have plans for another Saiki-delic road trip through Arizona, West Texas, and southern New Mexico over spring break. The first stop was going to be watching the Cubs play a couple of spring training games with R's brother K, but four days before we were supposed to meet him in Phoenix, we got a late night phone call that he had suffered a heart attack and was in the hospital.

The last time K came to visit, he got tickets to the Hawks-Kings
game at Staples Center. He would have been so thrilled 
that they won the Stanley Cup this year!
Thankfully, we were able to cancel our original plans and travel to Chicago on short notice instead. R flew back right away, while the boys and I joined him as soon as school let out for spring break. For the next few days we stayed at the ICU with K and the rest of our extended family until the decision was made to move K into hospice care. He was called home to be with the Lord on April 1. We were blessed to celebrate his life with so many of his friends and our family. Easter Sunday service the next morning was especially meaningful, knowing that K was now with Jesus, our risen Savior.

Fast forward 2.5 months -- we're back in Illinois again, mainly to spend time with our families and to honor K one more time. But I'm never one to miss an opportunity to feed my compulsions, so stay tuned as we visit the Land of Lincoln (150 years since his death) and other places of interest along the way.

Since we arrived yesterday afternoon, the only thing we have been feeding so far is our faces. First stop... Steak 'n Shake!

And my mother started taking menu requests weeks ago...

Dinner: mapo tofu (hot braised tofu with pork), shredded pork with napa cabbage
char siu park with hoisin sauce, stir-fried shrimp

Lunch: scallion cakes and shredded daikon cakes with sesame seeds

Dinner: homemade chicken nuggets, potato salad, and Parker House rolls

Counting my blessings today - for my mom and her great cooking, for hyperthyroidism so I can eat to my heart's content, and for stretchy pants!
